Doppiette di melanzane alla messinese: the typical Sicilian eggplant rolls

 

The culinary tradition of Messina, like the Sicilian cuisine in general, is rich in flavours and traditions. The dishes to taste would be so many that one holiday is not enough. So, we want to recommend one: le doppiette di melanzane alla messinese, the Sicilian eggplant rolls.

  • What they are. It is a very special recipe: in practice, macaroni rolls with eggplant and ricotta, two of the most typical flavours of Sicily. Usually, le doppiette di melanzane are a first course.
  • Ingredients: eggplant, pasta (preferably spaghetti), tomato sauce, ricotta, Parmesan cheese, onion, basil, extra virgin olive oil, salt. These are the most widely used ingredients. Consider that you can find, in Sicily, several variants of these ingredients.
  • How to prepare. The eggplant slices are fried in hot oil and then placed on a plate. It’s prepared pasta with tomato sauce, onion, fresh basil and ricotta. A small amount of pasta is put in an eggplant slice, which is rolled. The rolls are covered with tomato sauce and finally baked.
  • Serve & taste. As already said, Sicilian eggplant rolls are a first course. To enjoy their full taste, nothing better than a good glass of red wine, such as Etna rosso DOC.
